Ingredients

For the crust:

  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 cup coconut oil (solid)
  • 6-8 tbsp cold water

For the filling:

 

  • 6 cups apples (peeled, cored, and sliced; about 6 medium apples)
  • 1/2 cup brown sugar (or coconut sugar)
  • 1 tbsp lemon juice
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tbsp cornstarch (or arrowroot powder)

Direction

1. Make the crust:

  • In a large bowl, mix the flour, salt, and sugar. Add the solid coconut oil and mix until the mixture resembles coarse crumbs.
  • Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape into discs, and wrap in plastic wrap. Chill in the fridge for at least 30 minutes.

2. Prepare the filling:

  • In a large bowl, combine sliced apples, brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch. Toss until apples are well coated.

3. Assemble the pie:

  • Preheat your oven to 425°F (220°C).
  • Roll out one disc of chilled dough on a floured surface to fit your pie pan. Transfer it to the pan, pressing it gently into the bottom and up the sides.
  • Fill with the apple mixture, then roll out the second disc and place it over the filling. Crimp the edges to seal and cut a few slits in the top for steam to escape.

4. Bake:

  • Bake in the preheated oven for 45-50 minutes or until the crust is golden brown and the filling is bubbly.

5. Cool and serve:

  • Allow the pie to cool for at least 15 minutes before slicing. Serve warm or at room temperature.
