Ingredients
For the Salad:
- 2 ripe avocados, peeled, pitted, and cubed
- 1 ripe mango, peeled, pitted, and diced
- 1 small cucumber, peeled and diced (optional, for extra crunch)
- 1/4 cup red onion, finely diced (optional, for a little bite)
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon fresh mint, chopped (optional)
For the Dressing:
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon honey or agave syrup (optional, for sweetness)
- Salt and freshly ground black pepper, to taste
- A pinch of chili flakes or diced jalapeño (optional, for a spicy kick)
Direction
-
Prepare the Salad Ingredients:
- Begin by peeling and dicing the avocados and mango. Cut the avocado into cubes, and be gentle to avoid mashing it. For the mango, slice off both cheeks from the pit, score the flesh into cubes, and then scoop them out with a spoon.
- Optionally, peel and dice the cucumber for extra freshness and crunch. You can also finely dice the red onion if you’re using it, which adds a savory contrast to the sweetness of the fruit.
- Place all the prepared ingredients (avocado, mango, cucumber, onion) into a large mixing bowl.
-
Prepare the Dressing:
- In a small bowl, whisk together the olive oil, lime juice, honey (or agave syrup), salt, and pepper. Taste the dressing and adjust the seasoning as needed. If you like a little heat, you can stir in a pinch of chili flakes or finely diced jalapeño to give the salad a spicy kick.
-
Assemble the Salad:
- Drizzle the dressing over the diced avocado and mango mixture. Gently toss everything together to coat the fruit and vegetables evenly, being careful not to mash the avocado.
- Add the chopped cilantro and mint to the salad and give it one final toss to mix the herbs throughout the salad.
-
Serve:
- Serve the Avocado and Mango Salad immediately, or let it sit for 5-10 minutes to allow the flavors to meld together. It can be enjoyed on its own or as a refreshing side dish with grilled chicken, fish, or tacos.
