Ingredients
- 2 ripe avocados
- 1 cup breadcrumbs (panko breadcrumbs for extra crunch)
- 1/2 cup flour (all-purpose)
- 2 large eggs, beaten
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Olive oil spray or vegetable oil for frying
- Optional: Ranch dressing, sriracha mayo, or ketchup for dipping

Prepare the Avocados:
Start by cutting the avocados in half and removing the pit. Use a spoon to scoop the avocado flesh out of the skin, then slice the avocado into thick wedges (about 6-8 pieces per avocado). -
Set Up the Breading Station:
Set up three shallow bowls:- Bowl 1: Place the flour in the first bowl.
- Bowl 2: Beat the eggs in the second bowl.
- Bowl 3: Combine the breadcrumbs, garlic powder, paprika, salt, and pepper in the third bowl.

Coat the Avocado Wedges:
Dip each avocado wedge first into the flour, coating it lightly. Then dip it into the beaten egg, followed by the breadcrumb mixture, ensuring that the avocado is well-coated with breadcrumbs. -
Chill (Optional):
For extra crispiness, place the breaded avocado fries on a baking sheet lined with parchment paper and chill them in the refrigerator for 10 minutes. This helps the coating set and prevents it from falling off during frying. -
Fry or Bake:
For Frying: Heat about 1 inch of oil in a frying pan over medium heat. Once the oil is hot (you can test it by dropping in a breadcrumb – it should sizzle), carefully place the breaded avocado fries in the pan. Fry them in batches for 2-3 minutes on each side or until golden brown and crispy. Remove from the oil and place on paper towels to drain excess oil.For Baking: Preheat your oven to 400°F (200°C). Place the breaded avocado fries on a baking sheet lined with parchment paper. Lightly spray them with olive oil spray. Bake for 12-15 minutes, flipping halfway through, until crispy and golden.

Arrange the crispy avocado fries on a serving platter. Serve with your choice of dipping sauces like ranch dressing, spicy mayo, or ketchup.
Tips:
- Baking Option: If you prefer to bake the avocado fries, make sure to spray the fries with oil for a crispy texture.
- Extra Flavor: Add grated parmesan to the breadcrumb mixture for a cheesy twist.
- Chilling: Chilling the fries helps the breading to stick better, giving you a crispier result when frying.
