Ingredients

  • 2 medium eggplants
  • 3 tbsp tahini (sesame paste)
  • 1-2 cloves garlic, minced
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tbsp olive oil (plus extra for drizzling)
  • Salt to taste
  • Fresh parsley for garnish (optional)
  • Pomegranate seeds (optional for garnish)

Direction

  1. Prepare the Eggplant:
    • Preheat your oven to 400°F (200°C).
    • Pierce the eggplants with a fork several times to allow steam to escape while roasting.
    • Place the eggplants directly on the oven rack or on a baking sheet. Roast for 30-40 minutes, turning once or twice until the skin is charred and the flesh is soft. The eggplants should collapse when pressed lightly.
  2. Cool the Eggplant:
    • Remove the eggplants from the oven and let them cool for about 10 minutes. You want the flesh to be cool enough to handle but still soft.
  3. Scoop the Flesh:
    • Once the eggplant is cool enough, slice them in half lengthwise. Scoop the soft flesh out with a spoon into a bowl, discarding the skins.
  4. Mash the Eggplant:
    • Using a fork or a potato masher, mash the eggplant flesh to a smooth consistency. If you prefer a chunkier texture, leave it a bit more rustic.
  5. Mix in the Other Ingredients:
    • Add tahini, minced garlic, lemon juice, olive oil, and salt to the mashed eggplant. Mix everything until smooth. Taste and adjust seasoning with more salt, lemon, or garlic as desired.
  6. Serve:
    • Transfer the Baba Ganoush to a serving bowl. Drizzle with a bit more olive oil on top and garnish with chopped parsley and pomegranate seeds, if using.
  7. Enjoy:
    • Serve with pita bread, vegetable sticks (carrot, cucumber, etc.), or crackers for dipping. Baba Ganoush can also be served alongside grilled meats or as part of a mezze platter.
