- 1 lb beef (sirloin or tenderloin, sliced into thin strips)
- 2 tablespoons vegetable oil
- 1 medium onion (chopped)
- 8 oz mushrooms (sliced)
- 2 cloves garlic (minced)
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard (optional)
- 1 cup sour cream
- Salt and pepper (to taste)

- Slice the beef into thin strips against the grain. Chop the onion and slice the mushrooms.

Sear the Beef:
- In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the beef strips in batches to avoid overcrowding. Sear until browned, about 2-3 minutes. Remove the beef from the skillet and set aside.

Sauté Vegetables:
- In the same skillet, add the remaining tablespoon of oil. Add the chopped onion and cook until softened, about 3-4 minutes. Add the sliced mushrooms and cook until they release their moisture and start to brown, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

- Pour in the beef broth, Worcestershire sauce, and Dijon mustard (if using). Bring to a simmer and cook for about 5 minutes to reduce slightly.
