Ingredients

For the Meat Filling:

  • 500 g (1 lb) minced beef or lamb
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 tbsp apple cider vinegar
  • 2 tbsp chutney (optional)
  • 1 cup milk (for soaking the bread)
  • 2 slices white bread (preferably a bit stale)
  • 1/2 cup raisins or apricots (or a mix)
  • 1 tbsp sugar (optional)
  • Salt and pepper to taste

For the Topping:

  • 2 large eggs
  • 1/2 cup milk
  • 1 tbsp cream (optional for richness)
  • Salt and pepper to taste
  • A few bay leaves for garnish (optional)

Direction

1. Prepare the Meat Filling:

  • In a large pan, heat the oil over medium heat. Add the chopped onion and sauté for about 5 minutes until soft and translucent.
  • Add the garlic and cook for an additional minute until fragrant.
  • Add the minced beef or lamb to the pan, breaking it apart with a spoon. Cook for about 5-7 minutes until the meat is browned and cooked through.
  • Sprinkle in the curry powder, turmeric, ground coriander, sugar (if using), and salt and pepper. Stir well to coat the meat in the spices and cook for another 2-3 minutes to allow the flavors to meld.
  • Stir in the raisins (or apricots), apple cider vinegar, and chutney (if using). The raisins or dried fruit add a subtle sweetness that balances the spiciness of the curry.
  • Remove the pan from the heat and set aside to cool slightly.

2. Soak the Bread:

  • Tear the bread into small pieces and place it in a small bowl.
  • Pour milk over the bread and let it soak for about 10-15 minutes, until the bread is soft and mushy. Once soaked, use a fork or your hands to break up the bread into a smooth paste-like texture.
  • Add the soaked bread mixture to the meat filling and stir well to combine. This helps bind the filling together and gives it a soft texture.

3. Assemble the Bobotie:

  • Preheat your oven to 180°C (350°F).
  • Grease a baking dish (around 8×8 inches or a similar size) with a bit of oil or butter.
  • Transfer the spiced meat mixture into the prepared baking dish, spreading it out evenly.

4. Prepare the Egg Custard Topping:

  • In a small bowl, whisk together the eggs, milk, and cream (if using). Add salt and pepper to taste. The egg custard will set on top of the meat mixture as it bakes, creating a golden, creamy crust.
  • Pour the egg mixture over the meat filling, ensuring it covers the top evenly.
  • Garnish with a few bay leaves on top, if desired, for extra flavor and presentation.

5. Bake the Bobotie:

  • Place the baking dish in the oven and bake for 30–40 minutes until the egg topping is golden and firm to the touch.
  • The bobotie should be bubbling slightly at the edges and set in the center. If the top is browning too quickly, you can cover it loosely with foil and continue baking.

6. Serve:

  • Once baked, remove the bobotie from the oven and let it cool slightly before serving.
  • Serve the bobotie with yellow rice, a side of sambal (spicy chutney), and a simple cucumber salad or other fresh vegetables for a well-rounded meal.
