Ingredients

  • 1 baguette or crusty Italian bread
  • 2-3 ripe tomatoes, diced
  • 2 cloves of garlic, minced
  • Fresh basil leaves, chopped
  • 2-3 tablespoons olive oil
  • Salt and pepper to taste
  • Balsamic vinegar (optional)

Direction

  1. Prepare the Topping:

    • Dice the Tomatoes: Start by washing and drying the ripe tomatoes. Cut them in half, remove the seeds if desired (to reduce excess moisture), and dice them into small pieces. Place the diced tomatoes in a mixing bowl.
    • Add Garlic and Basil: Mince the garlic cloves finely and add them to the bowl. Chop fresh basil leaves into small pieces and add them as well.
    • Season: Drizzle about 2-3 tablespoons of olive oil over the mixture. Season with salt and pepper to taste. If you like a bit of acidity, you can add a splash of balsamic vinegar at this stage.
    • Mix and Let Sit: Gently toss the mixture to combine all the ingredients. Let it sit for 15 minutes at room temperature. This resting time allows the flavors to meld and enhances the overall taste.
  2. Toast the Bread:

    • Preheat the Oven or Grill: If using an oven, preheat it to 400°F (200°C). If you prefer grilling, preheat your grill to medium-high heat.
    • Slice the Bread: Cut the baguette or crusty Italian bread into 1/2-inch thick slices. You can slice diagonally for a more appealing presentation.
    • Arrange on a Baking Sheet: Place the slices on a baking sheet in a single layer. If grilling, arrange them on the grill grates.
    • Drizzle with Olive Oil: Lightly brush or drizzle olive oil on one side of each bread slice. This will help achieve a nice golden color and add flavor.
    • Toast:
      • In the Oven: Bake the bread for about 5-7 minutes, or until it’s golden brown and crispy. Keep an eye on it to prevent burning.
      • On the Grill: Grill for about 2-3 minutes per side, checking frequently to ensure they don’t burn. You want them to have grill marks and a crunchy texture.
  3. Assemble the Bruschetta:

    • Top the Toasted Bread: Once the bread is toasted, remove it from the oven or grill. Using a spoon, generously scoop the tomato mixture onto the toasted side of each bread slice. Be careful not to overload them, as the topping may spill over.
    • Drizzle with Balsamic Vinegar (Optional): If desired, add a light drizzle of balsamic vinegar over the topped bruschetta for an extra layer of flavor.
  4. Serve:

    • Presentation: Arrange the bruschetta on a serving platter. For an added touch, garnish with a few whole basil leaves or a sprinkle of freshly cracked pepper.
    • Enjoy Immediately: Serve the bruschetta right away while the bread is still warm and crispy. It’s best enjoyed fresh to fully appreciate the flavors and textures.

Feel free to customize the toppings based on your preferences, adding ingredients like mozzarella, olives, or roasted peppers for variations!
