Ingredients

  • 1 pound carrots (about 4-5 medium carrots)
  • 1/4 cup butter
  • 1/2 cup brown sugar (light or dark)
  • 1/4 cup water
  • 1 teaspoon vanilla extract (optional)
  • Salt to taste
  • Fresh parsley or thyme for garnish (optional)

Direction

  • Prep the Carrots:
    •  Peel the carrots and cut them into uniform pieces (about 1/4 to 1/2 inch thick).
  • Cook the Carrots:
    • In a large skillet, melt the butter over medium heat.
    • Add the carrots and sauté for about 5 minutes, stirring occasionally.
  • Add Sugar and Water:
    • Sprinkle the brown sugar over the carrots and pour in the water.
    • Stir to combine, making sure the sugar dissolves.
  • Simmer:
    • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 15-20 minutes, or until the carrots are tender and the liquid has thickened to a syrupy consistency.
  • Add Vanilla and Season:
    • Stir in the vanilla extract, if using, and season with a pinch of salt to enhance the flavors.
  • Serve:
    • Transfer the candied carrots to a serving dish and garnish with fresh parsley or thyme, if desired.
