Ingredients
- 1 pound (450g) boneless, skinless chicken breasts, diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can (14 ounces / 400g) diced tomatoes
- 1 can (8 ounces / 227g) tomato sauce
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 12 lasagna noodles, cooked according to package instructions
- 2 cups (480ml) ricotta cheese
- 1 egg
- 1/2 cup (120ml) grated Parmesan cheese
- 3 cups (720ml) shredded mozzarella cheese
- Fresh basil or parsley for garnish (optional)
Direction
- Prepare the Chicken Mixture:
- In a large skillet, heat some olive oil over medium-high heat. Add the chopped onion and garlic, sauté until softened.
- Add diced chicken breasts and cook until browned and cooked through.
- Stir in diced tomatoes, tomato sauce, red bell pepper, dried basil, dried oregano, salt, and pepper. Bring to a simmer and cook for about 10-15 minutes until the sauce thickens slightly. Remove from heat.
- Prepare the Cheese Mixture:
- In a bowl, combine ricotta cheese, egg, and grated Parmesan cheese. Mix well until smooth and well combined.
- Assemble the Lasagna:
- Preheat your oven to 375°F (190°C).
- Spread a thin layer of the chicken mixture on the bottom of a 9×13 inch baking dish.
- Arrange a layer of cooked lasagna noodles over the chicken mixture.
- Spread half of the ricotta cheese mixture over the noodles.
- Spoon half of the remaining chicken mixture over the ricotta layer.
- Sprinkle with 1 cup of shredded mozzarella cheese.
- Repeat the layers: noodles, ricotta mixture, chicken mixture, and mozzarella cheese.
- Finish with a layer of noodles topped with the remaining chicken mixture and the remaining mozzarella cheese.
- Bake the Lasagna:
- Cover the baking dish loosely with aluminum foil.
- Bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the edges are golden brown.
- Let it Rest:
- Remove the lasagna from the oven and let it cool for about 10 minutes before slicing and serving. This allows it to set and makes it easier to slice neatly.
