Ingredients

  • 2 cups cooked white rice (preferably cooled)
  • 1 cup cooked chicken breast, diced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Green onions, chopped (optional, for garnish)

Direction

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add minced garlic and chopped onion to the skillet. Stir-fry until fragrant and onions are translucent.
  3. Push the garlic and onion to one side of the skillet, and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix them with the garlic and onion.
  4. Add another tablespoon of vegetable oil to the skillet. Stir in the diced chicken breast and cook until heated through.
  5. Stir in the mixed vegetables and cook for a few minutes until they are tender-crisp.
  6. Add the cooked rice to the skillet, breaking up any clumps. Stir-fry for a few minutes to heat the rice evenly.
  7. Pour soy sauce over the rice mixture, stirring well to combine all ingredients evenly. Season with salt and pepper to taste.
  8. Continue to stir-fry for another 2-3 minutes, ensuring everything is heated through and well mixed.
  9. Remove from heat and garnish with chopped green onions if desired.
