Ingredients
- 1/2 cup white rice (short or medium grain)
- 4 cups whole milk
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Ground cinnamon or nutmeg (optional, for garnish)
Direction
Rinse the rice: Rinse the rice under cold water until the water runs clear. This helps remove excess starch.
Combine ingredients: In a heavy-bottomed saucepan, combine the rinsed rice, whole milk, sugar, and salt. Stir well to combine.
Cook the rice: Bring the mixture to a boil over medium-high heat, stirring frequently to prevent sticking.
Simmer: Once boiling, reduce the heat to low. Simmer uncovered, stirring occasionally, for about 30-40 minutes or until the rice is tender and the mixture has thickened to a creamy consistency. Be careful not to let it boil over or stick to the bottom of the pan.
Add vanilla: Stir in the vanilla extract during the last few minutes of cooking.
Serve: Remove from heat and let the rice pudding cool slightly. Serve warm or chilled, garnished with a sprinkle of ground cinnamon or nutmeg if desired.
