Ingredients

For the Galbi Marinade:

  • 3 lbs (1.4 kg) beef short ribs (flanken-style or English-style cut)
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 4 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1/4 cup sesame oil
  • 1/4 cup pear puree (or grated Asian pear; it tenderizes the meat)
  • 2 tbsp honey
  • 1 tsp black pepper
  • 1 tsp sesame seeds (optional, for garnish)

Direction

Step 1: Prepare the Short Ribs

  1. Begin by washing and trimming the short ribs if necessary. If the short ribs have a lot of fat, trim excess fat while keeping enough for flavor.
  2. Pat them dry with a paper towel and set them aside.

Step 2: Make the Marinade

  1. In a large mixing bowl, combine soy sauce, brown sugar, minced garlic, grated ginger, sesame oil, pear puree, honey, and black pepper. Whisk until the sugar dissolves completely and the ingredients are well mixed.

Step 3: Marinate the Short Ribs

  1. Place the short ribs into a large, resealable plastic bag or a large bowl. Pour the marinade over the short ribs, ensuring all the meat is thoroughly coated.
  2. Seal the bag (or cover the bowl) and let the short ribs marinate in the refrigerator for at least 2 hours—ideally overnight for maximum flavor penetration.

Step 4: Prepare the Cooking Method

You can choose between grilling, braising, or broiling:

Option 1: Grilling

  • Preheat your grill to medium-high heat.
  • Grill the short ribs for 3-4 minutes per side or until they are caramelized, smoky, and tender.

Option 2: Braising

  1. Heat a large pot over medium heat and add a bit of vegetable oil.
  2. Remove the short ribs from the marinade (reserve the marinade) and brown them on all sides in the pot.
  3. Add the marinade to the pot along with enough water to cover the short ribs about 3/4 of the way.
  4. Bring to a boil, then reduce the heat to low, cover, and simmer for 1 to 1.5 hours, or until the meat is tender and the sauce has thickened.

Option 3: Broiling

  1. Preheat your broiler to high heat.
  2. Place the short ribs on a broiler pan or baking tray.
  3. Broil for about 3-4 minutes per side, or until nicely browned and caramelized.

Step 5: Garnish & Serve

  1. Once the Galbi is cooked, sprinkle with toasted sesame seeds and optionally garnish with sliced green onions or fresh cilantro for added color and flavor.
