  • 4 tbsp olive oil
  • 6-8 cloves garlic, thinly sliced
  • 1 tsp red pepper flakes (adjust to taste)
  • 1/2 tsp smoked paprika (optional, for added depth)
  • 1/4 tsp sea salt
  • 1/4 tsp freshly ground black pepper
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh lemon juice (optional, for brightness)

Direction

Step 1: Prep the Ingredients

  1. Peel and devein the shrimp if they haven’t already been prepped. Pat them dry with a paper towel to remove excess moisture.
  2. Thinly slice the garlic cloves.
  3. Chop fresh parsley and set aside for garnish.

Step 2: Heat the Pan

  1. Heat a large skillet or frying pan over medium heat. Add the 4 tbsp of olive oil. Allow it to warm for about 30 seconds.

Step 3: Sauté the Garlic and Red Pepper Flakes

  1. Add the sliced garlic and red pepper flakes to the skillet. Stir frequently to ensure the garlic doesn’t burn. Sauté for 1-2 minutes, or until fragrant and golden brown.

Step 4: Cook the Shrimp

  1. Add the shrimp to the skillet. Season with smoked paprika, sea salt, and freshly ground black pepper. Stir everything together, allowing the shrimp to cook evenly.
  2. Cook for 3-4 minutes, or until the shrimp are pink, opaque, and curled. Avoid overcooking, as shrimp can become rubbery if cooked too long.

Step 5: Add Lemon Juice & Finish

  1. If using, add lemon juice to the pan and give everything a quick stir. This will brighten up the flavors and balance the richness of the olive oil and garlic.

Step 6: Garnish & Serve

  1. Turn off the heat and sprinkle the dish with chopped fresh parsley.
  2. Transfer the Gambas al Ajillo to a serving dish and serve immediately with crusty bread or over rice.
