1. Prepare the Simple Syrup:

  • Heat: Bring the mixture to a gentle boil over medium heat, stirring occasionally until the sugar is completely dissolved (about 5 minutes). Remove from heat and let it cool.

2. Mix the Flavors:

  • Add Juice or Puree: Once the syrup has cooled, stir in 2 cups of your chosen fruit juice or puree. If using a whole fruit, blend it until smooth and strain to remove any solids if desired. You can also add the zest of the fruit for extra flavor.

3. Freeze the Mixture:

  • Pour into a Dish: Transfer the mixture into a shallow, freezer-safe dish (like a baking dish) to allow it to freeze evenly.

  • Initial Freezing: Place the dish in the freezer for about 1-2 hours until it begins to freeze around the edges.

4. Scrape and Fluff:

  • Scrape with a Fork: After 1-2 hours, use a fork to scrape the ice that has formed around the edges, mixing it back into the slushy center. Return it to the freezer.

  • Repeat: Every 30 minutes, continue scraping the granita with a fork until it is light and fluffy. This process usually takes about 4 hours total.

5. Serve:

  • Scoop and Present: Once the granita has reached a fluffy consistency, scoop it into serving bowls or glasses.

  • Garnish (Optional): You can garnish with fresh fruit, mint leaves, or a drizzle of complementary syrup for added flavor.
