Halloumi Grilled with Lemon and Herbs

Ingredients
- 250g halloumi cheese (preferably Cypriot-style, sliced into 1/2-inch thick pieces)
- 2 tablespoons olive oil (for marinade)
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano (or fresh oregano, chopped)
- 1/2 teaspoon garlic powder (or 2 cloves garlic, minced)
- 1/2 teaspoon black pepper
- Fresh lemon wedges (for garnish)
- Fresh parsley (for garnish)

Prepare the Marinade: In a small bowl, combine the olive oil, lemon juice, oregano, garlic powder, and black pepper. Stir well to combine, creating a simple marinade.

Marinate the Halloumi: Place the halloumi slices into a shallow dish. Pour the marinade over the cheese, making sure it’s evenly coated. Cover and let the halloumi marinate in the refrigerator for about 30 minutes. This step is optional, but marinating will enhance the flavor.

Preheat the Grill or Pan: Heat a grill pan or barbecue grill over medium-high heat. You can also use a regular non-stick frying pan if a grill is not available. Make sure the pan is hot before cooking the halloumi.

Grill the Halloumi: Once the pan is hot, place the marinated halloumi slices on the grill. Grill for about 2-3 minutes per side, or until the cheese forms grill marks and develops a golden-brown crust. If using a regular frying pan, cook the halloumi until both sides are crispy and golden.

Serve: Once cooked, remove the halloumi from the grill and transfer to a plate. Garnish with fresh lemon wedges and a sprinkle of chopped parsley. Serve immediately.
