Ingredients

For the Broth:

  • 2 lbs pork bones (preferably neck bones or trotters)
  • 8 cups water
  • 1 onion, halved
  • 1 piece of ginger (2 inches), sliced
  • 1-2 star anise
  • 1 cinnamon stick
  • Salt, to taste

For the Noodles and Toppings:

  • 8 oz rice noodles (flat or round)
  • 1 cup cooked shrimp, peeled and deveined
  • 1 cup pork tenderloin, thinly sliced
  • 1 cup squid, cleaned and sliced (optional)
  • Bean sprouts, for garnish
  • Green onions, chopped
  • Fresh herbs (cilantro, basil, mint)
  • Lime wedges
  • Chili sauce or fresh chili, for heat (optional)

Direction

  1. Prepare the Broth:

    • Rinse the pork bones under cold water. In a large pot, add the bones and cover with 8 cups of water. Bring to a boil, then reduce heat to simmer for 5 minutes. Drain and rinse the bones to remove impurities.
    • Return the bones to the pot, add the onion, ginger, star anise, cinnamon stick, and salt. Cover and simmer for about 2 hours, skimming off any foam that rises to the surface.
  2. Marinate the Proteins:

    • In a bowl, marinate the sliced pork tenderloin with a pinch of salt and pepper for at least 1 hour (or overnight for deeper flavor).
  3. Cook the Noodles:

    • In a separate pot, bring water to a boil. Add the rice noodles and cook according to package instructions until just tender. Drain and rinse under cold water to stop the cooking process. Set aside.
  4. Prepare the Toppings:

    • In the last 30 minutes of simmering the broth, add the marinated pork to the pot. Cook until the pork is tender, about 15-20 minutes. If using squid, add it during the last 5 minutes.
    • Add the cooked shrimp in the last few minutes just to heat through.
  5. Assemble the Hu Tieu:

    • In a bowl, place a portion of noodles. Ladle the hot broth and proteins over the noodles. Top with bean sprouts, green onions, and fresh herbs.
    • Serve with lime wedges and chili sauce on the side for added flavor.
