Ingredients
For the Broth:
- 2 lbs pork bones (preferably neck bones or trotters)
- 8 cups water
- 1 onion, halved
- 1 piece of ginger (2 inches), sliced
- 1-2 star anise
- 1 cinnamon stick
- Salt, to taste
For the Noodles and Toppings:
- 8 oz rice noodles (flat or round)
- 1 cup cooked shrimp, peeled and deveined
- 1 cup pork tenderloin, thinly sliced
- 1 cup squid, cleaned and sliced (optional)
- Bean sprouts, for garnish
- Green onions, chopped
- Fresh herbs (cilantro, basil, mint)
- Lime wedges
- Chili sauce or fresh chili, for heat (optional)

Prepare the Broth:
- Rinse the pork bones under cold water. In a large pot, add the bones and cover with 8 cups of water. Bring to a boil, then reduce heat to simmer for 5 minutes. Drain and rinse the bones to remove impurities.
- Return the bones to the pot, add the onion, ginger, star anise, cinnamon stick, and salt. Cover and simmer for about 2 hours, skimming off any foam that rises to the surface.

Marinate the Proteins:
- In a bowl, marinate the sliced pork tenderloin with a pinch of salt and pepper for at least 1 hour (or overnight for deeper flavor).

Cook the Noodles:
- In a separate pot, bring water to a boil. Add the rice noodles and cook according to package instructions until just tender. Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Toppings:
- In the last 30 minutes of simmering the broth, add the marinated pork to the pot. Cook until the pork is tender, about 15-20 minutes. If using squid, add it during the last 5 minutes.
- Add the cooked shrimp in the last few minutes just to heat through.

Assemble the Hu Tieu:
- In a bowl, place a portion of noodles. Ladle the hot broth and proteins over the noodles. Top with bean sprouts, green onions, and fresh herbs.
- Serve with lime wedges and chili sauce on the side for added flavor.
