Ingredients

For the Meatballs:

  • 1 lb (450g) ground beef or lamb
  • 1 medium onion, finely grated or chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 tsp garlic powder or 2 cloves garlic, minced

  • 1 tsp paprika
  • 1/2 tsp ground black pepper
  • 1 tsp salt

For the Tomato Sauce:

  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz / 400g) crushed tomatoes or 2 large fresh tomatoes, grated
  • 1 tsp sugar (optional, to balance acidity)
  • 1 tsp red pepper flakes or chili flakes (optional)
  • 1 tsp dried oregano or thyme
  • 1/2 tsp salt

Direction

Step 1: Prepare the Meatball Mixture

  1. In a large mixing bowl, combine the ground meat, breadcrumbs, milk, grated onion, garlic powder, cumin, paprika, black pepper, and salt. Mix well until the mixture comes together and is evenly seasoned.

Step 2: Form the Meatballs

  1. Take small portions of the meat mixture and shape them into medium-sized meatballs (about 1.5-inch / 3 cm in diameter). You should have about 12-15 meatballs depending on the size.

Step 3: Cook the Meatballs

  1. Heat 2 tbsp of olive oil in a large, deep skillet or Dutch oven over medium heat.
  2. Add the meatballs in batches, browning them on all sides (about 3-4 minutes). This step will help lock in flavor. Remove them from the skillet and set aside.

Step 4: Prepare the Tomato Sauce

  1. In the same skillet (using the oil left behind), add 1 chopped onion and 2 cloves of minced garlic. Sauté until fragrant and golden brown, about 3 minutes.
  2. Stir in the crushed tomatoes, dried oregano, red pepper flakes, sugar (if using), and a pinch of salt. Let it simmer for 2-3 minutes until the tomato mixture becomes aromatic.

Step 5: Combine and Simmer

  1. Return the browned meatballs to the skillet with the tomato sauce. Stir gently to ensure all the meatballs are covered in the sauce.
  2. Cover the pot with a lid and let it simmer over low heat for 25-30 minutes. This allows the flavors to meld and ensures the meatballs are cooked through. Stir occasionally to ensure nothing sticks to the bottom of the pan.

Step 6: Adjust Seasoning

  1. Taste the sauce and adjust the seasoning if needed, adding more salt, pepper, or a touch more red pepper flakes for heat if desired.

Step 7: Serve

  1. Remove from heat and serve hot. Garnish with fresh parsley if desired.
