Ingredients
For the Noodles:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup water (adjust as needed)
- 1 tablespoon vegetable oil (optional)
For the Soup:
- 500g (about 1 lb) beef or lamb, cut into cubes
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 2-3 cloves garlic, minced
- 2 large tomatoes, diced (or 1 can of diced tomatoes)
- 1 large bell pepper, chopped
- 2 medium carrots, julienned
- 2-3 potatoes, diced (optional)
- 1-2 tablespoons soy sauce (to taste)
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 1 teaspoon black pepper
- Salt to taste
- Fresh herbs (like cilantro or parsley) for garnish
- Water or beef broth (about 6 cups)

Prepare the Noodle Dough:
- In a mixing bowl, combine the flour and salt. Gradually add the water, mixing until a rough dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
- Cover the dough with a damp cloth or plastic wrap and let it rest for about 10 minutes.

Make the Soup Base:
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and cook for an additional minute, until fragrant.
- Stir in the cubed meat and brown on all sides.

Add Vegetables and Spices:
- Add the diced tomatoes, bell pepper, carrots, and optional potatoes to the pot. Cook for about 5-7 minutes, allowing the vegetables to soften.
- Season with soy sauce, cumin, coriander, black pepper, and salt. Stir well to combine.

- Pour in the water or beef broth, ensuring all ingredients are covered. Bring to a boil, then reduce the heat and let it simmer for about 30 minutes, until the meat is tender and the flavors meld together.
