Ingredients

  • 1 large onion, chopped
  • 2-3 cloves garlic, minced
  • 2 large tomatoes, diced (or 1 can of diced tomatoes)
  • 1 large bell pepper, chopped
  • 2 medium carrots, julienned
  • 2-3 potatoes, diced (optional)
  • 1-2 tablespoons soy sauce (to taste)
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon black pepper
  • Salt to taste
  • Fresh herbs (like cilantro or parsley) for garnish
  • Water or beef broth (about 6 cups)

Direction

  • Prepare the Noodle Dough:

    • In a mixing bowl, combine the flour and salt. Gradually add the water, mixing until a rough dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
    • Cover the dough with a damp cloth or plastic wrap and let it rest for about 10 minutes.
  • Make the Soup Base:

    • In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
    • Add the minced garlic and cook for an additional minute, until fragrant.
    • Stir in the cubed meat and brown on all sides.
  • Add Vegetables and Spices:

    • Add the diced tomatoes, bell pepper, carrots, and optional potatoes to the pot. Cook for about 5-7 minutes, allowing the vegetables to soften.
    • Season with soy sauce, cumin, coriander, black pepper, and salt. Stir well to combine.
  • Simmer the Soup:

    • Pour in the water or beef broth, ensuring all ingredients are covered. Bring to a boil, then reduce the heat and let it simmer for about 30 minutes, until the meat is tender and the flavors meld together.
  • Prepare the Noodles:

    • While the soup is simmering, take the rested dough and divide it into smaller portions. Roll each portion into thin ropes or use a pasta machine to create thin noodles.
    • Dust the noodles with flour to prevent sticking.
  • Cook the Noodles:

    • In a separate pot of boiling salted water, add the freshly made noodles. Cook for about 3-5 minutes, or until al dente. Drain and set aside.
  • Assemble and Serve:

    • To serve, place a portion of noodles in a bowl and ladle the hot soup over them. Garnish with fresh herbs and additional spices if desired.
