Ingredients

  • 1 lb ground Italian sausage (or ground beef)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped (optional)
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) tomato sauce
  • 4 cups beef or chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • 1 cup broken lasagna noodles (about 4 lasagna noodles broken into pieces)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley, chopped, for garnish
  • Ricotta cheese, for serving (optional)

Direction

  1. Brown the Meat: In a large pot or Dutch oven, cook 1 lb of ground Italian sausage or beef over medium-high heat until browned. Drain excess fat if needed.
  2. Saute Aromatics: Add 1 chopped onion, 3 minced garlic cloves, and 1 chopped bell pepper (optional) to the pot. Cook for 3-4 minutes until softened.
  3. Add Ingredients: Stir in 1 can (14 oz) diced tomatoes, 1 can (14 oz) tomato sauce, 4 cups of beef or chicken broth, 1 tsp dried basil, 1 tsp dried oregano, 1/2 tsp salt (or to taste), 1/4 tsp black pepper (or to taste), and 1/2 tsp red pepper flakes (optional).
  4. Simmer: Bring the mixture to a simmer.
  5. Add Noodles: Add 1 cup broken lasagna noodles (about 4 lasagna noodles broken into pieces) to the pot. Simmer for 10-12 minutes, or until noodles are tender, stirring occasionally.
  6. Serve: Ladle the soup into bowls. Top each serving with shredded mozzarella cheese, grated Parmesan cheese, and chopped fresh basil or parsley.
  7. Optional Garnish: Add a dollop of ricotta cheese to each bowl for extra creaminess, if desired.
