Ingredients
- 1 lb ground Italian sausage (or ground beef)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped (optional)
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) tomato sauce
- 4 cups beef or chicken broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1/2 teaspoon red pepper flakes (optional, for heat)
- 1 cup broken lasagna noodles (about 4 lasagna noodles broken into pieces)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil or parsley, chopped, for garnish
- Ricotta cheese, for serving (optional)
Direction
- Brown the Meat: In a large pot or Dutch oven, cook 1 lb of ground Italian sausage or beef over medium-high heat until browned. Drain excess fat if needed.
- Saute Aromatics: Add 1 chopped onion, 3 minced garlic cloves, and 1 chopped bell pepper (optional) to the pot. Cook for 3-4 minutes until softened.
- Add Ingredients: Stir in 1 can (14 oz) diced tomatoes, 1 can (14 oz) tomato sauce, 4 cups of beef or chicken broth, 1 tsp dried basil, 1 tsp dried oregano, 1/2 tsp salt (or to taste), 1/4 tsp black pepper (or to taste), and 1/2 tsp red pepper flakes (optional).
- Simmer: Bring the mixture to a simmer.
- Add Noodles: Add 1 cup broken lasagna noodles (about 4 lasagna noodles broken into pieces) to the pot. Simmer for 10-12 minutes, or until noodles are tender, stirring occasionally.
- Serve: Ladle the soup into bowls. Top each serving with shredded mozzarella cheese, grated Parmesan cheese, and chopped fresh basil or parsley.
- Optional Garnish: Add a dollop of ricotta cheese to each bowl for extra creaminess, if desired.
