Ingredients

Protein Options:

  • 1 lb (450g) chicken thighs or breast (cut into chunks) or 1 lb beef, pork, shrimp, or tofu

Massaman Curry Paste:

  • 2 tbsp Massaman curry paste (store-bought or homemade)

Sauce Ingredients:

  • 1 can (14 oz / 400 ml) coconut milk
  • 2 tbsp vegetable oil
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • 2 tsp brown sugar
  • 1/2 cup roasted peanuts (unsalted, crushed)

Vegetables:

  • 2 medium potatoes, diced
  • 2 medium carrots, sliced
  • 1 medium onion, chopped
  • Optional: 1 cup green beans, chopped bell peppers, or other preferred vegetables

Direction

Step 1: Prepare Ingredients

  1. Chop the protein (chicken, pork, shrimp, or tofu) into bite-sized pieces. Dice and prepare all vegetables, and crush the roasted peanuts.

Step 2: Sauté the Curry Paste

  1. In a large pot or deep skillet, heat the vegetable oil over medium heat.
  2. Add the Massaman curry paste to the pot and sauté for 1-2 minutes until it becomes fragrant.

Step 3: Add the Protein

  1. Add your choice of chicken, beef, pork, shrimp, or tofu to the pot. Stir until the protein is evenly coated with the curry paste and lightly browned on all sides.

Step 4: Add Coconut Milk and Sauce Ingredients

  1. Pour in the coconut milk and stir well to combine with the curry paste and protein.
  2. Add the fish sauce, soy sauce, and brown sugar to the pot. Stir to mix everything.

Step 5: Add Vegetables and Simmer

  1. Add the diced potatoes, carrots, and onions to the pot. Stir well to ensure they’re coated in the curry mixture.
  2. Bring the curry to a gentle simmer. Reduce the heat to low, cover the pot, and let it cook for 25-30 minutes, until the vegetables are tender and the flavors have developed.

Step 6: Add Peanuts and Additional Vegetables

  1. About 10 minutes before serving, stir in the crushed roasted peanuts and any other additional vegetables you want to add (green beans, bell peppers, etc.). Continue simmering until all vegetables are tender and the flavors have melded together.

Step 7: Taste & Adjust Seasoning

  1. Taste the curry and adjust seasonings if necessary—add more fish sauce, soy sauce, or brown sugar if you prefer it sweeter or saltier.

Step 8: Serve

  1. Remove from heat and serve hot with steamed rice or roti. Garnish with additional crushed peanuts or fresh cilantro if desired.
