Ingredients

For the Salad:

  • 6 cups fresh baby spinach, washed and dried
  • 8 oz (225g) cremini mushrooms, thinly sliced (or a mix of button and shiitake mushrooms)
  • 1/2 small red onion, thinly sliced (optional, for extra flavor)
  • 1/4 cup (30g) crumbled feta cheese (optional, for extra creaminess)
  • 1/4 cup toasted walnuts, almonds, or pine nuts (optional, for added crunch)
  • 1 small cucumber, sliced (optional, for extra freshness)
  • 1/2 avocado, diced (optional, for creaminess)

For the Dressing:

  • 3 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar (or red wine vinegar)
  • 1 tsp Dijon mustard (optional, for a little tang)
  • 1 tsp honey or maple syrup (optional, for sweetness)
  • Salt and freshly ground black pepper, to taste
  • 1/2 tsp dried oregano or Italian seasoning (optional, for added flavor)
  • 1 tbsp lemon juice (freshly squeezed)

Direction

  • Prepare the salad ingredients:

    • In a large salad bowl, combine the fresh spinach leaves, thinly sliced mushrooms, and red onion (if using).
    • Add the optional cucumber slices, avocado, and feta cheese to the bowl. If you’re using nuts, add them now as well. Gently toss to mix everything together.
  • Make the dressing:

    • In a small bowl or jar, whisk together the olive oil, balsamic vinegar, Dijon mustard (if using), honey (or maple syrup), lemon juice, salt, pepper, and dried oregano (or Italian seasoning). Taste and adjust the seasoning as needed—add more honey for sweetness or more vinegar for tanginess.
  • Assemble the salad:

    • Drizzle the dressing over the salad just before serving and toss gently to coat all the ingredients evenly. If you’re marinating the salad for a few minutes, let it sit for about 5-10 minutes to allow the flavors to meld together.
  • Serve:

    • Serve the salad immediately as a side dish or a light main course. Garnish with extra crumbled feta or nuts if desired.
