For the Dressing:
- 3 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar (or red wine vinegar)
- 1 tsp Dijon mustard (optional, for a little tang)
- 1 tsp honey or maple syrup (optional, for sweetness)
- Salt and freshly ground black pepper, to taste
- 1/2 tsp dried oregano or Italian seasoning (optional, for added flavor)
- 1 tbsp lemon juice (freshly squeezed)
