Ingredients

Dough:

  • 4 cups (500g) all-purpose flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 3/4 cup (180 ml) whole milk, lukewarm
  • 1/4 cup (50g) granulated sugar
  • 4 large egg yolks
  • 1/4 cup (60g) unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/2 tsp salt

For the Filling (choose one or more):

  • 1 cup (240g) fruit jam (such as raspberry, strawberry, or apricot)
  • 1 cup (240ml) custard or cream filling

For the Topping:

  • 1 cup (120g) powdered sugar
  • Optional: Additional glaze or icing

Direction

  • Activate the Yeast:

    • In a small bowl, combine the lukewarm milk and 1 tsp of the granulated sugar. Stir in the active dry yeast, cover with a clean towel, and let it sit for 5-10 minutes until it becomes frothy.
  • Prepare the Dough:

    • In a large mixing bowl, whisk together the flour, the remaining sugar, and salt.
    • Add the yeast mixture, egg yolks, melted butter, and vanilla extract to the flour mixture. Mix until a dough begins to form.
  • Knead the Dough:

    • Knead the dough for 8-10 minutes until it becomes smooth, elastic, and no longer sticky. If needed, add a small amount of flour (1 tsp at a time).
  • First Proofing:

    • Place the dough in a lightly greased bowl, cover with plastic wrap or a clean towel, and let it rise in a warm area for 1.5 to 2 hours, or until doubled in size.
  • Portion the Dough:

    • Once the dough has risen, punch it down and divide it into 12 equal-sized portions. Roll each portion into a ball and place them on a lightly floured surface.
  • Second Proofing:

    • Cover the rolled dough balls with a clean towel and let them rest for 30 minutes to allow them to proof slightly before frying.
  • Prepare the Oil for Frying:

    • In a large pot, heat vegetable oil to 350°F (175°C). Make sure the oil is hot enough but not overly hot, to ensure even frying.
  • Fry the Pączki:

    • Carefully place each dough ball into the hot oil, frying 3-4 at a time to prevent overcrowding. Fry for 2-3 minutes per side, or until golden brown. Use tongs or a slotted spoon to remove them from the oil and place them on a paper towel to drain excess oil.
  • Fill the Pączki:

    • Allow the fried Pączki to cool slightly before filling. Using a pastry bag with a piping tip or a small spoon, inject each Pączki with your chosen jam or custard filling.
  • Glaze or Dust with Powdered Sugar:

    • Dust the filled Pączki with powdered sugar or drizzle them with icing if desired.
  • Serve and Enjoy:

    • Serve your warm, freshly made Pączki with coffee, tea, or hot cocoa and share them with friends and family
