Ingredients

  • 4 boneless, skinless chicken breasts
  • ¼ cup olive oil
  • Juice and zest of 2 lemons
  • 3 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)
  • 2 tablespoons fresh thyme, chopped (or 1 tablespoon dried)
  • Salt and pepper to taste

Direction

  • Prepare the Marinade:

    • In a bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, rosemary, thyme, salt, and pepper.
  • Marinate the Chicken:

    • Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it’s well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (up to 2 hours for more flavor).
  • Cook the Chicken:

    • Grilling: Preheat the grill to medium-high heat. Grill the chicken for 6-7 minutes per side, or until cooked through (internal temperature should reach 165°F/75°C).
    • Baking: Preheat the oven to 375°F (190°C). Place the marinated chicken on a baking sheet and bake for 20-25 minutes, or until cooked through.
  • Serve:

    • Let the chicken rest for a few minutes before slicing. Serve with your choice of vegetables or a fresh salad.
