Ingredients

  • For the filling:

    • 4 cups sliced fresh peaches (or canned peaches, drained)
    • 1/2 cup granulated sugar
    • 1 tablespoon lemon juice
    • 1 teaspoon cinnamon
    • 1 tablespoon cornstarch (optional, for thickening)
  • For the topping:

    • 1 cup all-purpose flour
    • 1 tablespoon baking powder
    • 1/2 teaspoon salt
    • 1/4 cup granulated sugar
    • 1/4 cup unsalted butter, melted
    • 1/2 cup milk

Direction

  • Preheat the Oven:

    • Preheat your oven to 375°F (190°C).
  • Prepare the Filling:

    • In a large bowl, mix the sliced peaches with 1/2 cup of granulated sugar, lemon juice, cinnamon, and cornstarch (if using). Toss until the peaches are well coated. Pour this mixture into a greased 9×13-inch baking dish.
  • Make the Topping:

    • In another bowl, combine 1 cup of all-purpose flour, 1 tablespoon of baking powder, 1/2 teaspoon of salt, and 1/4 cup of granulated sugar. Stir until well mixed.
    • Add 1/4 cup of melted unsalted butter and 1/2 cup of milk to the dry ingredients. Mix until just combined; do not overmix.
  • Assemble the Cobbler:

    • Pour the topping batter over the peach filling in the baking dish. You can spread it out gently, but it’s okay if some of the peach filling peeks through.
  • Bake:

    • Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
  • Cool and Serve:

    • Remove from the oven and allow the cobbler to cool for about 10 minutes before serving. This dessert is best enjoyed warm, preferably with a scoop of vanilla ice cream or a dollop of whipped cream.
