For the filling:
- 4 cups sliced fresh peaches (or canned peaches, drained)
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon
- 1 tablespoon cornstarch (optional, for thickening)

- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1/2 cup milk

Preheat the Oven:
- Preheat your oven to 375°F (190°C).

Prepare the Filling:
- In a large bowl, mix the sliced peaches with 1/2 cup of granulated sugar, lemon juice, cinnamon, and cornstarch (if using). Toss until the peaches are well coated. Pour this mixture into a greased 9×13-inch baking dish.

Make the Topping:
- In another bowl, combine 1 cup of all-purpose flour, 1 tablespoon of baking powder, 1/2 teaspoon of salt, and 1/4 cup of granulated sugar. Stir until well mixed.
- Add 1/4 cup of melted unsalted butter and 1/2 cup of milk to the dry ingredients. Mix until just combined; do not overmix.

Assemble the Cobbler:
- Pour the topping batter over the peach filling in the baking dish. You can spread it out gently, but it’s okay if some of the peach filling peeks through.

- Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
