Pineapple Coconut Popsicles are a refreshing, tropical treat perfect for hot summer days. Ingredients
- 2 cups fresh pineapple chunks (or pineapple from a can with no added sugar)
- 1 cup coconut milk (full-fat for creaminess)
- 1–2 tablespoons honey or maple syrup (optional, depending on sweetness of pineapple)
- 1 teaspoon lime juice (optional for extra freshness)
- 1/4 teaspoon vanilla extract (optional, for extra flavor)

Prepare the Pineapple:
- If using fresh pineapple, peel, core, and chop it into small chunks. If you’re using canned pineapple, drain and pat dry to remove excess liquid.

Blend Ingredients:
- In a blender or food processor, combine the fresh pineapple chunks, coconut milk, honey (or maple syrup), lime juice, and vanilla extract. Blend until smooth and creamy. The mixture should have a thick yet pourable consistency. Taste and adjust the sweetness if necessary by adding more honey or syrup.

Pour into Popsicle Molds:
- Carefully pour the pineapple-coconut mixture into your popsicle molds. Leave a little space at the top to allow the mixture to expand as it freezes.

Insert Sticks:
- If your popsicle molds require sticks, insert them into the center of each mold. Make sure they’re centered and upright.

Freeze:
- Place the molds in the freezer and allow them to freeze for 4–6 hours, or until solid.

Unmold the Popsicles:
- Once the popsicles are fully frozen, run warm water over the outside of the molds for a few seconds to help release them. Gently pull on the sticks to remove the popsicles.

- Serve the popsicles immediately for a cool, refreshing treat. If you want to store any leftovers, keep them in an airtight container in the freezer.
