- 2 cups cooked jasmine rice (preferably day-old rice for better texture)
- 1 cup fresh pineapple, cut into small chunks (or 1/2 cup canned pineapple, drained)
- 1/2 cup cooked shrimp, diced chicken, or tofu (optional)
- 2 tablespoons vegetable oil or sesame oil
- 1/2 cup diced carrots
- 1/2 cup peas (fresh or frozen)
- 2 eggs, beaten
- 1 small onion, diced
- 2 garlic cloves, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional for a richer flavor)
- 1 tablespoon fish sauce (optional for an authentic Thai taste)
- 1 tablespoon sugar (optional, if using fresh pineapple)
- 1/2 teaspoon chili flakes or 1 fresh chili (adjust to taste)
- 2 green onions, chopped (for garnish)
- 1 tablespoon toasted sesame seeds (optional, for garnish)
- Lime wedges (for serving)

Prep the Ingredients:
- If you’re using day-old rice, break it up so the grains are separated. Fresh rice can work, but day-old rice is preferred as it has a firmer texture that won’t become mushy.
- Cut the pineapple into small chunks, and set aside.
- Dice your choice of protein (shrimp, chicken, or tofu) if using.
- Dice the carrots, onion, and mince the garlic. Set aside.

Cook the Eggs:
- Heat 1 tablespoon of oil in a large wok or skillet over medium heat. Add the beaten eggs and scramble them until cooked through. Once done, transfer the scrambled eggs to a plate and set aside.
