A tropical twist on the classic mojito, the Pineapple Mojito combines the refreshing flavors of mint, lime, and rum with the sweet, tangy taste of pineapple. This cocktail is perfect for summer parties, barbecues, or anytime you want to enjoy a light, fruity drink with a little bit of a kick. The combination of pineapple and mint creates a burst of flavor that’s both sweet and refreshing.
Ingredients
- 1/2 cup fresh pineapple chunks (or pineapple juice)
- 8-10 fresh mint leaves (plus more for garnish)
- 1 lime, cut into wedges
- 2 oz white rum
- 1 tablespoon sugar (or simple syrup, to taste)
- 1/4 cup soda water or club soda (for fizz)
- Ice cubes
- Pineapple slice and mint sprig for garnish (optional)

Muddle the Ingredients:
- In a sturdy glass or cocktail shaker, add the fresh pineapple chunks (or pineapple juice), lime wedges, and mint leaves.
- Use a muddler or the back of a spoon to gently press the ingredients together. Muddling releases the juices from the lime and pineapple, and releases the oils from the mint leaves. Don’t mash too hard; just enough to release the flavors.

Add Sugar (or Simple Syrup):
- Add the sugar (or simple syrup) to the muddled mixture. Stir to combine and dissolve the sugar. This helps to balance the tanginess of the lime and pineapple with some sweetness. Adjust the sweetness according to your preference.

Add the Rum:
- Pour in 2 oz of white rum, and stir the mixture well to combine all the flavors.

Fill with Ice:
- Add ice cubes to the glass, filling it about 3/4 full. The ice helps chill the cocktail and gives it the refreshing, cold finish.

- Pour soda water or club soda into the glass to add some fizz. Stir gently to combine the soda with the rest of the ingredients.
