Ingredients
- 4 cups fresh pineapple chunks (about 1 medium pineapple)
- 1/2 cup sugar (or adjust to taste)
- 1/4 cup water
- 1 tablespoon lemon juice (or lime juice)
- 1/2 teaspoon lemon or lime zest (optional, for extra citrus flavor)

- Peel and core the pineapple, then cut it into small chunks. If you prefer a smoother texture, you can use frozen pineapple chunks as well.

Make the Simple Syrup:
- In a small saucepan, combine the sugar and water over medium heat. Stir occasionally until the sugar dissolves completely. Once dissolved, remove from heat and allow the simple syrup to cool to room temperature. This process helps dissolve the sugar evenly into the pineapple puree.

Blend the Pineapple:
- In a blender or food processor, combine the fresh pineapple chunks, cooled simple syrup, and lemon or lime juice. Blend until smooth and creamy. Taste the mixture and adjust sweetness by adding more sugar if needed.

- If you want a perfectly smooth sorbet, you can strain the mixture through a fine mesh sieve to remove any pulp. This step is optional and depends on your texture preference.

Chill the Mixture:
- Once the pineapple puree is smooth, place the mixture in the refrigerator for about 30 minutes to chill. This will help the sorbet freeze faster and more evenly.

Freeze the Sorbet:
- Using an Ice Cream Maker:
- Pour the chilled pineapple mixture into the ice cream maker and churn according to the manufacturer’s instructions, typically for about 20-25 minutes, until the sorbet thickens and reaches a soft-serve consistency.
- Without an Ice Cream Maker:
- Pour the chilled pineapple mixture into a shallow, freezer-safe container. Place the container in the freezer and every 30 minutes, use a fork to scrape and stir the mixture. This process helps break up ice crystals and gives the sorbet its smooth texture. Repeat this process for about 4-5 hours, or until the sorbet is fully frozen and has a fluffy, granita-like texture.
