-
Recipe Views: 20
Pork Souvlaki is a beloved Cypriot dish consisting of tender pieces of marinated pork that are skewered and grilled to perfection. The meat is typically marinated in a flavorful mix of olive oil, garlic, lemon, and oregano, giving it a fresh and zesty taste. It’s traditionally served with pita bread, fresh vegetables, and sometimes drizzled with tzatziki sauce. Souvlaki is a favorite for grilling season, perfect for outdoor cookouts or casual family dinners.

Ingredients
For the Marinade:
- 500g (1 lb) pork shoulder or pork tenderloin, cut into 1-inch cubes
- 3 tablespoons olive oil
- 2 tablespoons lemon juice (freshly squeezed)
- 3 cloves garlic, minced
- 1 tablespoon dried oregano (or fresh oregano, if available)
- 1 teaspoon ground cumin (optional, for extra depth of flavor)
- 1 teaspoon paprika (for a slight smokiness, optional)
- Salt and freshly ground black pepper, to taste
For Serving:
- Pita bread (or flatbreads)
- Tzatziki sauce (for dipping)
- Fresh salad (cucumbers, tomatoes, red onion, and olives)
- Lemon wedges (for extra zest)
Direction
1. Marinate the Pork:
- In a large bowl, combine the olive oil, lemon juice, minced garlic, oregano, ground cumin, paprika, salt, and pepper. Stir well to combine into a marinade.
- Add the pork cubes to the bowl and mix thoroughly so that the meat is evenly coated with the marinade.
- Cover the bowl with plastic wrap or transfer the pork and marinade to a zip-top bag. Let the pork marinate in the refrigerator for at least 1 hour, but for the best flavor, marinate it for 2 hours. If you’re in a rush, even 30 minutes will still provide good results, but longer marinating yields more tender and flavorful meat.
2. Prepare the Grill or Grill Pan:
- Preheat your grill or grill pan to medium-high heat. If using an outdoor grill, make sure to oil the grill grates to prevent sticking. If using a grill pan on the stove, lightly grease it with a little olive oil.
3. Thread the Pork onto Skewers:
- After the pork has marinated, thread the pork cubes onto skewers, making sure the pieces are packed closely together, but not too tight.
- If using wooden skewers, soak them in water for 20 minutes before grilling to prevent them from burning. Metal skewers can be used without soaking.
4. Grill the Pork:
- Place the skewers on the preheated grill or grill pan. Grill the pork for 4-5 minutes per side, turning occasionally, until the pork is cooked through and has nice grill marks. The internal temperature of the pork should reach about 145°F (63°C) for perfect doneness.
- You want the pork to be crispy on the outside but still juicy and tender on the inside.
5. Assemble and Serve:
- Once the pork is cooked, remove the skewers from the grill and let them rest for a few minutes.
- While the meat is resting, warm the pita bread on the grill for a minute or two, just until it becomes slightly toasted.
- Serve the pork souvlaki with the warm pita, a generous dollop of tzatziki sauce, and a side of fresh salad (cucumber, tomato, and red onion) for added freshness.
- Garnish with lemon wedges for an extra burst of citrus flavor.
