Ingredients

For the Marinade:

  • 500g (1 lb) pork shoulder or pork tenderloin, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice (freshly squeezed)
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano (or fresh oregano, if available)
  • 1 teaspoon ground cumin (optional, for extra depth of flavor)
  • 1 teaspoon paprika (for a slight smokiness, optional)
  • Salt and freshly ground black pepper, to taste

For Serving:

  • Pita bread (or flatbreads)
  • Tzatziki sauce (for dipping)
  • Fresh salad (cucumbers, tomatoes, red onion, and olives)
  • Lemon wedges (for extra zest)

Direction

1. Marinate the Pork:

  • In a large bowl, combine the olive oil, lemon juice, minced garlic, oregano, ground cumin, paprika, salt, and pepper. Stir well to combine into a marinade.
  • Add the pork cubes to the bowl and mix thoroughly so that the meat is evenly coated with the marinade.
  • Cover the bowl with plastic wrap or transfer the pork and marinade to a zip-top bag. Let the pork marinate in the refrigerator for at least 1 hour, but for the best flavor, marinate it for 2 hours. If you’re in a rush, even 30 minutes will still provide good results, but longer marinating yields more tender and flavorful meat.

2. Prepare the Grill or Grill Pan:

  • Preheat your grill or grill pan to medium-high heat. If using an outdoor grill, make sure to oil the grill grates to prevent sticking. If using a grill pan on the stove, lightly grease it with a little olive oil.

3. Thread the Pork onto Skewers:

  • After the pork has marinated, thread the pork cubes onto skewers, making sure the pieces are packed closely together, but not too tight.
  • If using wooden skewers, soak them in water for 20 minutes before grilling to prevent them from burning. Metal skewers can be used without soaking.

4. Grill the Pork:

  • Place the skewers on the preheated grill or grill pan. Grill the pork for 4-5 minutes per side, turning occasionally, until the pork is cooked through and has nice grill marks. The internal temperature of the pork should reach about 145°F (63°C) for perfect doneness.
  • You want the pork to be crispy on the outside but still juicy and tender on the inside.

5. Assemble and Serve:

  • Once the pork is cooked, remove the skewers from the grill and let them rest for a few minutes.
  • While the meat is resting, warm the pita bread on the grill for a minute or two, just until it becomes slightly toasted.
  • Serve the pork souvlaki with the warm pita, a generous dollop of tzatziki sauce, and a side of fresh salad (cucumber, tomato, and red onion) for added freshness.
  • Garnish with lemon wedges for an extra burst of citrus flavor.
