Ingredients
For the Dough:
- 3 cups all-purpose flour
- 1 large egg
- 1/2 cup water (you may need a bit more or less)
- 1/2 teaspoon salt
For the Filling:
- 1 pound ground meat (beef, pork, or a mix)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced (optional)
- Salt and pepper to taste
- Optional herbs (like dill or parsley)
Direction
1. Make the Dough:
- In a large bowl, combine the flour and salt.
- In a separate bowl, whisk together the egg and water.
- Gradually mix the wet ingredients into the flour until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth.
- Cover the dough with a clean kitchen towel or plastic wrap and let it rest for 30 minutes.
2. Prepare the Filling:
- In a bowl, combine the ground meat, chopped onion, garlic (if using), salt, and pepper.
- Mix well until all ingredients are incorporated. Taste a small amount of the filling to adjust seasoning as needed.
3. Assemble the Pelmeni:
- Roll out the dough on a floured surface to about 1/8 inch thick.
- Use a round cutter (about 3 inches in diameter) to cut out circles from the dough.
- Place a teaspoon of filling in the center of each circle.
- Fold the circle in half and pinch the edges to seal. Then, bring the two ends together and pinch to form a little dumpling shape.
4. Cook the Pelmeni:
- Bring a large pot of salted water to a boil.
- Drop the pelmeni into the boiling water. When they float to the top, cook for an additional 2-3 minutes.
- Remove with a slotted spoon and transfer to a serving dish.
5. Serve:
- Pelmeni are often served with sour cream, vinegar, or melted butter. You can also garnish with fresh herbs.
Tips:
- You can freeze uncooked pelmeni by placing them on a baking sheet until frozen and then transferring them to a freezer bag. Cook from frozen when ready.
- Feel free to experiment with fillings, like mushrooms, potatoes, or even cottage cheese for a vegetarian option.
