Ingredients

For the Dough:

  • 3 cups all-purpose flour
  • 1 large egg
  • 1/2 cup water (you may need a bit more or less)

  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced (optional)
  • Salt and pepper to taste

Direction

1. Make the Dough:

  1. In a large bowl, combine the flour and salt.
  2. In a separate bowl, whisk together the egg and water.
  3. Gradually mix the wet ingredients into the flour until a dough forms.
  4. Knead the dough on a floured surface for about 5-7 minutes until smooth.
  5. Cover the dough with a clean kitchen towel or plastic wrap and let it rest for 30 minutes.

2. Prepare the Filling:

  1. In a bowl, combine the ground meat, chopped onion, garlic (if using), salt, and pepper.
  2. Mix well until all ingredients are incorporated. Taste a small amount of the filling to adjust seasoning as needed.

3. Assemble the Pelmeni:

  1. Roll out the dough on a floured surface to about 1/8 inch thick.
  2. Use a round cutter (about 3 inches in diameter) to cut out circles from the dough.
  3. Place a teaspoon of filling in the center of each circle.
  4. Fold the circle in half and pinch the edges to seal. Then, bring the two ends together and pinch to form a little dumpling shape.

4. Cook the Pelmeni:

  1. Bring a large pot of salted water to a boil.
  2. Drop the pelmeni into the boiling water. When they float to the top, cook for an additional 2-3 minutes.
  3. Remove with a slotted spoon and transfer to a serving dish.

5. Serve:

  • Pelmeni are often served with sour cream, vinegar, or melted butter. You can also garnish with fresh herbs.

Tips:

  • You can freeze uncooked pelmeni by placing them on a baking sheet until frozen and then transferring them to a freezer bag. Cook from frozen when ready.
  • Feel free to experiment with fillings, like mushrooms, potatoes, or even cottage cheese for a vegetarian option.
