Ingredients
For the Samgyeopsal:
- 1 lb (450g) pork belly slices (thickly sliced, about 1/4 to 1/2 inch thick)
- 2-3 cloves garlic, minced
- 1 tsp sesame oil
- 1 tsp salt
- 1 tsp black pepper
For the Ssam (Lettuce Wraps):
- 1 head of iceberg lettuce or Romaine, washed and separated into individual leaves
- Optional: Perilla leaves for a traditional touch
For the Dipping Sauces (recommended):
-
Ssamjang (Korean BBQ Sauce):
- 3 tbsp doenjang (fermented soybean paste)
- 2 tbsp gochujang (Korean chili paste)
- 1 tsp sesame oil
- 1 tsp honey
- Optional: Minced garlic
-
Sesame Oil Dip:
- 2 tbsp sesame oil
- 1 tsp salt
Optional Sides:
- Kimchi
- Pickled vegetables
- Steamed rice
Direction
-
Prep the Pork Belly:
- Take the pork belly slices out of the refrigerator and let them sit at room temperature for about 10 minutes to ensure even cooking.
- Season both sides with salt and black pepper.
-
Prepare the Grill or Griddle:
- Preheat a Korean BBQ grill, cast-iron skillet, or tabletop grill over medium-high heat. If using an electric grill, ensure it is preheated to the proper temperature.
-
Grill the Pork Belly:
- Once the grill is hot, add the pork belly slices to the grill one at a time, ensuring not to overcrowd the surface. Grill for 3-4 minutes per side, or until golden brown and crispy.
- As the pork belly cooks, you can brush the meat with sesame oil for added flavor and moisture.
-
Prepare the Lettuce Wraps and Sides:
- While grilling, prepare a platter of fresh lettuce leaves (or perilla leaves, if available) and arrange them for easy access.
- Prepare dipping sauces: Combine the ingredients for Ssamjang and sesame oil dip in separate small bowls.
-
Serve with Sides:
- Once the pork belly is fully cooked, serve it hot with the lettuce wraps, dipping sauces, and any additional sides like kimchi or rice.
-
Build Your Wraps:
- To eat, place a slice of grilled pork belly in a lettuce leaf, add a dollop of Ssamjang or sesame oil dip, and optionally top with kimchi or rice. Wrap it up and enjoy the flavorful, smoky bite!
