Ingredients
For the Dough:
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1/2 cup cold water (adjust as needed)
- 1/4 cup vegetable oil or melted butter
- 1 egg (for egg wash)
For the Filling:
- 500g (about 1 lb) ground lamb or beef
- 1 large onion, finely chopped
- 1 teaspoon cumin seeds
- 1 teaspoon black pepper
- 1 teaspoon salt (adjust to taste)
- Optional: chopped fresh herbs (like cilantro or parsley) for added flavor

Prepare the Dough:
- In a large bowl, mix the flour and salt. Gradually add the cold water and vegetable oil, mixing until a rough dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic.
- Wrap the dough in plastic wrap or cover it with a damp cloth, and let it rest for at least 30 minutes. This helps relax the gluten.

Make the Filling:
- In a mixing bowl, combine the ground meat, chopped onion, cumin, black pepper, and salt. Mix well until all ingredients are evenly incorporated. If using, fold in the chopped herbs.

Shape the Samsa:
- After the dough has rested, divide it into equal portions (about 6-8).
- Roll each portion into a ball, then flatten it into a disk on a floured surface.
- Roll out each disk into a circle, about 6-8 inches in diameter.
- Place a generous spoonful of the filling in the center of each circle. Fold the dough over to create a triangle, pinching the edges tightly to seal. You can also crimp the edges for a decorative touch.

Preheat the Oven:
- Preheat your oven to 400°F (200°C). If you have a tandoor, you can use that for a more traditional cooking method.

Prepare for Baking:
- Place the samsas on a baking sheet lined with parchment paper.
- In a small bowl, beat the egg and brush it over the tops of the samsas for a golden finish.

Bake the Samsa:
- Bake in the preheated oven for about 20-25 minutes, or until the tops are golden brown and the dough is cooked through. If using a tandoor, place the samsas against the walls of the tandoor and cook until golden.
