Ingredients

  • 1 lb beef (flank steak or sirloin, thinly sliced against the grain)
  • 2 cups broccoli florets
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce (optional, for added flavor)
  • 2 tablespoons cornstarch (divided)
  • 2 tablespoons vegetable oil (for cooking)
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced (or 1/2 teaspoon ground ginger)
  • Salt and pepper, to taste
  • Cooked rice (for serving)

Direction

  1. Prepare the Beef:

    • In a bowl, combine the thinly sliced beef with 1 tablespoon of soy sauce, 1 tablespoon of cornstarch, and a pinch of salt and pepper. Mix well and let it marinate for about 10 minutes while you prepare the other ingredients.
  2. Blanch the Broccoli:

    • In a pot of boiling water, blanch the broccoli florets for about 2 minutes until bright green and slightly tender. Drain and immediately transfer to a bowl of ice water to stop cooking. Drain again and set aside.
  3. Make the Sauce:

    • In a small bowl, mix together the remaining 1 tablespoon of soy sauce, oyster sauce (if using), and 1 tablespoon of cornstarch. Add a few tablespoons of water to create a sauce and set aside.
  4. Stir-Fry the Beef:

    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated beef in a single layer. Stir-fry for about 2-3 minutes until browned and cooked through. Remove the beef from the skillet and set aside.
  5. Cook the Broccoli:

    • In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and ginger and stir-fry for about 30 seconds until fragrant.
    • Add the blanched broccoli to the skillet and stir-fry for 2-3 minutes until heated through.
  6. Combine and Add Sauce:

    • Return the cooked beef to the skillet with the broccoli. Pour in the sauce you prepared earlier and toss everything together to coat well. Cook for another 1-2 minutes until the sauce thickens slightly.
  7. Serve:

    • Serve the stir-fry hot over cooked rice.

Tips:

  • Cutting the Beef: To make slicing easier, you can freeze the beef for about 30 minutes before cutting it. This firms it up and makes it easier to slice thinly.
  • Add More Veggies: Feel free to add other vegetables like bell peppers, carrots, or snap peas for added color and nutrition.
