- 1 lb (450g) pork tenderloin or pork shoulder, cut into bite-sized pieces
- 1/2 cup cornstarch (for coating)

- 2 eggs, beaten

- 1 bell pepper (red or green), diced
- 1 onion, diced
For the Sweet and Sour Sauce:
- 1/4 cup sugar
- 1/4 cup vinegar (white or rice vinegar)
- 1/4 cup ketchup
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Prepare the Pork:
- In a bowl, mix the pork pieces with a pinch of salt and pepper. Set up a breading station with three bowls: one with cornstarch, one with beaten eggs, and one with flour.

Coat the Pork:
- Dip each piece of pork first into the cornstarch, then into the beaten eggs, and finally coat it with flour. Ensure each piece is evenly coated for a crispy texture.

Heat the Oil:
- In a deep skillet or wok, heat enough vegetable oil over medium-high heat for deep frying. The oil should be hot enough (around 350°F or 175°C) to sizzle when you add the pork.

- Carefully add the coated pork pieces in batches, avoiding overcrowding. Fry until golden brown and crispy, about 4-5 minutes. Remove the pork and drain on paper towels.
