1. Prepare Gelatin:

  • Bloom the Gelatin: In a small bowl, sprinkle 2 1/2 teaspoons of gelatin (or 1 packet) over 3 tablespoons of cold water. Let it sit for about 5-10 minutes. This step allows the gelatin to absorb the water and swell, ensuring it dissolves evenly in the cream mixture later.

2. Heat Cream Mixture:

  • Combine Ingredients: In a medium saucepan, add 2 cups of heavy cream, 1/2 cup of whole milk, and 1/2 cup of sugar. If you’re using a vanilla bean, split it lengthwise and scrape the seeds into the saucepan, adding both the seeds and the pod to the mixture.

  • Heat Gently: Place the saucepan over medium heat. Stir the mixture gently with a whisk or wooden spoon to help the sugar dissolve. Keep an eye on the mixture, stirring occasionally, until it begins to steam and is just about to simmer (small bubbles will form around the edges). Avoid bringing it to a full boil, as this can affect the texture.

3. Add Gelatin:

  • Remove from Heat: Once the mixture is hot and the sugar has fully dissolved, take the saucepan off the heat. If you used a vanilla bean, carefully remove the pod and discard it.

  • Incorporate Gelatin: Stir in the bloomed gelatin, making sure to mix well until it is completely dissolved. This may take a minute or two. You should see no visible grains of gelatin in the mixture.

  • Add Vanilla Extract: Mix in 1 tablespoon of vanilla extract for an extra layer of flavor. Stir until combined.

4. Strain and Pour:

  • Strain (Optional): For an ultra-smooth panna cotta, you can strain the mixture through a fine mesh sieve into a large measuring cup or bowl. This removes any undissolved gelatin and ensures a silky texture.

  • Pour into Ramekins: Carefully pour the panna cotta mixture into individual serving glasses or ramekins. Fill them about three-quarters full, leaving space at the top for any toppings you may want to add later.

5. Chill:

  • Cover and Refrigerate: Cover each ramekin or glass with plastic wrap to prevent any odors from the fridge from affecting the panna cotta. Place them in the refrigerator to chill for at least 4 hours, or until fully set. If you’re making them a day ahead, they can be stored in the refrigerator overnight.

6. Serve:

  • Check for Set: Before serving, gently shake a ramekin to see if it’s set; it should be firm but slightly jiggle in the center.

  • Unmold (if desired): If you prefer to unmold the panna cotta, run a thin knife around the edges of the ramekin to loosen it. Dip the bottom of the ramekin in warm water for a few seconds to help release the panna cotta, then invert onto a plate.

  • Add Toppings: Serve panna cotta as is, or top with your choice of fresh berries, berry compote, a drizzle of caramel sauce, or a sprinkle of crushed nuts for added flavor and texture.

  • Garnish (Optional): You can also add a sprig of mint or a dollop of whipped cream for a lovely presentation.
